Our namesake 'Touro' is Portugese for 'bull', while 'Churrascaria' is a Brazilian steakhouse. Churrasco is the cooking style, which translates roughly from the Portuguese for 'barbecue'. The meat carved tableside is served by the gaúchos. A gaúcho is a loose equivalent of the North American 'cowboy'. Traditionally, gaúchos cook their meats using large wooden or metal skewers driven vertically into the ground near a wood-burning open flame. They have been preparing meat this way for hundreds of years, and is much the same way we prepare and serve ours.
